Perhaps you may never imagine having french caviar paired with some of the  finest and rarest champagne while having freshest caviar facial treatment at the same time?  This is the day and possibly the first in the world.

how about enjoying your own 10g french caviar with the very delicious Delamotte Blanc de Blanc with your chosen friend after your fresh caviar facial treatment?

With the days getting that little bit colder and festive season in full swing in HK, it’s time to start thinking about moisturizing up and at same time keeping the belly happy and festive.  How and Where?  Go Pavillon Medspa.   They are launching a French Fresh Caviar Facial & Eye Treatment on 20Dec 2014 for the winter. Why Caviar?   They are rare and valuable, caviar has chockfull of nutrients known as vitellus (from the Latin “Vita”, meaning “life”), and when they were being applied on face, it is unique in a way almost irreplaceable. This Fresh Caviar treatment is unique in utilizes all the powers of caviar, hydration, nutrients, firming and relaxation.   The first refrigerated beauty treatment line with fresh caviar cells. Pavillon Medspa hosted a Caviar X Champagne Indulgence Day to launch such beauty lifestyle package.  The idea is to enjoy fresh caviar bursting with caviar serum (and all the beauty goodies) on face while having some rarest and finest in your palate. It was really an honor to have Gregoire Piochon from Champagne Salon joining us introducing Delamotte Blanc de Blanc while having Champagne Savart representative Anthony Chiu to pour one of my favorite Champagne Savart while we have Sebastien Salin from Les Halles de Bordeaux guiding us through Caviar history and each guest having their own 10g of Caviar de Neuvic (which is from south of France and it is definitely delicious and less salty than most caviar you may ever tasted) to taste. I had selected some of my most favorite grower champagne houses as well. Champagne DELAMOTTE BLANC DE BLANC NV Soft and generous.   Full of white floral aroma, with dry chalky, complex yet slightly peachy creamy notes.  This wine is made from Grand Cru Chardonnay grapes blended with 10 percent reserve wines, mostly sourced from vineyards in Le Mesnil-sur-Oger (2/3) with the rest coming from Avize and Cramant. This wine sees 5 years on the lees instead of 7 for the vintage.  The domaine lies next-door to its sister estate, Salon, one of the most iconic Champ. I love this one with the Caviar matching the best.  92/100

BERECHE Raphael, Reflet d’Antan 2008 (Lot n 2008OCT12) A spectacular Champ. So Gracious and persistent. 1/3 Chardonnay 1/3 Pinot Noir 1/3 Pinot Meunier. Chalky clay soil. The wines for Reflet are selected in the May following the vintage, aged on their lees in a cuve for another year, then introduced into a solera system (500 and 600 litre barrels) that was first begun in 1985. Once a year they bottle off 2/3, leaving the balance to blend with the next wines into the system.  It shows a silky texture of green herbs and orange peel, rich but light.  Amazing long finish, almost unreal perfumed left in mouth for the longest time.  96/100

BEDEL Francoise, Comme Autrefois 2000 A committed bio-dynamic methods in Crouttes-sur-Marne, in the Vallée de l’Aisne since 1998. This wine is deep and long in flavor.   Beautiful creamy mouse, powerful and expressive, with a pleasing blend of freshness and maturity.  the unique complexity of the wine partly came from the  70% Pinot Meunier and 30% Chardonnay blend being 13 years on the lees, I wouldn’t hesitate to decant these wines at all 97/100

Champagne Paul Dethune Brut Grand Cru 2004 Deliciously soft and pleasing drinking Champagne with a lovely zingy twist of lemon and pear skin to keep it fresh. Delicious now but an excellent one to lay down and enjoy in years to come.  60% Chardonnay 40% Pinot Noir.   94/100

Champagne Savart, L’Ouverture Brut 1er Cru Rich and round, a slightly sweeter style with touch of stony minerality typically of Ecueil, a 100% Pinot Noir Wine: this wine is made with 85% of grapes coming from the first pressing and 15% of grapes coming from the second pressing  90/100

Champagne Savart, Bulle de Rose 1er Cru Fresh cut with strawberries and rasberries, firm and crisp with 82% Pinot Noir, 10% Chardonnay, 8% Rouge.   Quite rich and  complex for such a young wine, really not a typical Rosé.    Very small productions only 5900 bottles made.  92/100

CHARTOGNE TAILLET, St Anne NV This is one of the best value Champagne I had ever tasted, a very good intro to grower Champagne.  (far from expensive) red apple, grapefruit on nose, fresh and light, bone dry and delicious.  Anyone who would love to get to know a bit more about one of the real good maker, Chartogne Taillet is one to start with.  93/100
